Bohemian Bistro, a new fine dining concept from Todd and Erica Kniess, is set to open in Occidental at 3782 Bohemian Hwy.
The new eatery will open in a vacant space previously occupied by Hazel Restaurant, according to a recent liquor license application submitted by the owners. Erica Kniess tells What Now San Francisco that the team hopes to open this new restaurant on the first day of Spring 2026, aiming for March 20th, although an official opening date has not yet been announced. When Bohemian Bistro opens, customers can expect a fine-dining prix-fixe menu and an outstanding selection of Russian River wines.
Todd Kniess, a Connecticut native, studied at the Culinary Institute of America in New York and completed his apprenticeship in the British West Indies. He went on to work at Four-Star and Five-Diamond hotels and restaurants, including the Sazerac in New Orleans and the Ritz Carlton in Naples, Florida. He later owned and operated Bistro Liaison in Berkeley for 16 years and Le Petit Cochon café before moving to Sonoma County. There, Todd and Erica combined their talents to create Acme Burger, which opened in early 2019.
Acme Burger, known for its locally sourced Sonoma Mountain Beef burgers, plant-based options, fresh seafood, and house-made sides, quickly became a neighborhood favorite. Todd’s culinary skills and Erica’s design and marketing abilities helped cultivate a community-focused atmosphere, hosting events such as Dine and Donate nights, Family Day Tuesdays, and offering discounts for first responders.
With Bohemian Bistro, Todd and Erica aim to bring their expertise and community-driven approach to a new audience, building on the reputation they developed with Acme Burger. While much about Bohemian Bistro remains to be revealed, the Kniess’ track record suggests the restaurant will become another locally loved destination in Sonoma County.
