Luma Mediterranean Kitchen, a fast casual restaurant specializing in fresh favorites, is opening a location in Lake Sumter Landing in the Villages.

The restaurant will open right on the lake as part of the the Villages’ Landing waterfront revitalization project. The revitalization project will expand the community’s walking and seating areas, add new waterfront activities, and create more spaces for residents and visitors to relax with friends while enjoying lake views, live entertainment, and the warm sunshine.

Luma has just broken ground on the new spot, and is expected to start serving guests fall 2026.The announcement comes on the heels of Luma opening a restaurant at Sawgrass Grove in early January. The first location was so well received, owner Fred Karimipour of FMK Hospitality announced he would open an additional location.

The restaurant’s concept is simple and based on fresh flavors. Guests can choose between a chicken shwarma, gyro, or falafel pita or a custom bowl. Bowls start with rice, lentils, or greens; followed by a choice of protein such as lamb, chicken, shrimp, or falafel; then vegetables, sauces, and other toppings can be added for a fully bespoke meal. The restaurant also serves hummus, and soft drinks to complete the meal.
