Miami’s best loved tacos are coming to Downtown Miami.
Coyo Taco is opening a restaurant at Bayside Marketplace, located in Downtown Miami at 401 Biscayne Boulevard. The restaurant will be located just off the main entrance, making sure everyone passing through has the opportunity for freshly made tacos and a great margarita.
According to Coyo’s chef/partner, Scott Linquist, an opening date hasn’t been set, though the team is hoping for some time in March 2026.
This new Coyo location will feature an indoor/outdoor bar and a fresh, modern design, thanks to Saladino Design Studio. Linquist tells What Now Miami that Coyo is part of Bayside Marketplace’s plan to showcase the best of Miami at its waterfront multi-use entertainment and dining complex. “It was important for the new owners to have home-grown Miami brands,” says Linquist.
Downtown Miami has been undergoing a renaissance in the past few years, and Bayside Marketplace is centrally located next to Port of Miami, the Kaseya Center, and the Miami Brightline station. This makes it a perfect place for Coyo, says Linquist. “The amount of people who visit Bayside annually is astounding already, and with the addition of four new cruise ship terminals and 10 new ships, it will only get busier.”
In addition to its already legendary tacos and guacamole, Coyo Bayside will also feature some unique menu items designed to wow both visitors to the Magic City and to lure locals to the destination: Michoacán-style carnitas, a traditional pork confit slow-cooked in a copper pot, served i tacos, in a burrito, or as a bowl will be a soulful addition to Coyo’s menu; while the new quesadilla Cubana — a quesadilla stuffed with traditional carnitas, sliced ham, pickles, and mustard — is a marriage of the best of Cuban and Mexican flavors.
Coyo Taco opened its first restaurant in 2015 in Miam’s Wynwood neighborhood and almost instantly drew long lines for its authentic Mexican street food made with 100% natural, hand-crafted corn tortillas made fresh on-site daily. The brand has grown to seven locations in South Florida, Portugal, and Colombia.
