Two new dining concepts are set to spark Ambler’s food scene this spring in the historic former Wyndham Hotel.

Hospitality veteran Barry Caplan has bought Gypsy Blu at 34 E. Butler Ave., planning to transform it into Porter, an American restaurant, and Gaslight, a cocktail bar. He also acquired the neighboring El Limon at 38 E. Butler Ave., according to The Philadelphia Business Journal.

Caplan, owner of Access Hotels & Resorts and Access Management in the Southeast, will partner with CFO Benjamin Hur and executive chef Brian Thress on the new dining concepts.

Although he will collaborate with his Access partners, Caplan told the outlet Porter and Gaslight will operate independently of the companies.

Porter will occupy the ground floor of the former hotel, taking its name from a hotel porter, the staff member who assists guests with luggage. The restaurant will reflect the theme with vintage suitcases and leather accents.

The menu, echoing Gypsy Blu, will feature upscale American cuisine, including shrimp cocktail, roasted duck breast and linguine vongole.

Gaslight will take shape on the building’s second floor, offering a dimly lit setting. The cocktail bar will serve craft drinks alongside small plates.

Gypsy Blu will continue dinner service Wednesday through Sunday and brunch on Saturdays and Sundays until the grand opening of Porter and Gaslight. El Limon will also remain open.

An official opening date has not been announced, but construction is underway. Stay tuned!
