Helmed by Chef Izu Ani, GAIA Miami offers an expansive and soulful interpretation of Mediterranean dining whose approach blends the simplicity of Greek home cooking with refined craftsmanship and the highest-quality ingredients. Chef Izu’s culinary philosophy was shaped by decades of travel and learning, from the kitchens of France and Spain to a formative summer living in Santorini, where he discovered the power of letting ingredients speak for themselves. That belief extends to how GAIA approaches each new city. Rather than replicating a fixed menu, Chef Izu adapts to the environment, its ingredients, its air, its energy.
Guests can expect raw selections featuring bluefin tuna caviar and their famed Sea Bream Carpaccio with emon, mandarin and truffle dressing, a dish that reflects Chef Izu’s deep admiration for Japanese technique, carved with precision so that the fish, without adornment, becomes the statement. The starters section invites communal sharing in true Greek tradition, with highlights including baked barrel-aged feta wrapped in honey, nuts, and filo pastry; a classic moussaka layered with aubergine, minced beef, and béchamel; and wood oven prawns finished with harissa, rosemary, and chili. From the sea, whole fish are prepared to order using techniques ranging from a fragrant salt crust with sage and orange zest to a bold harissa-style preparation with garlic and lemon. Heartier mains include slow-cooked baby goat from the wood oven, charcoal-grilled wagyu rib eye, and a lobster linguini in cherry tomato sauce.
At the heart of the experience is GAIA’s signature Ice Market, a defining ritual of the brand worldwide, featuring a daily selection of pristine fish and seafood displayed on ice, inviting guests to hand-select their meal and enjoy it prepared to their preference.
