Mt. Juliet breakfast-and-brunch restaurant The Paper Mill is bringing its second location to downtown Gallatin. Owner Justin Ragan told What Now Nashville that they have plans to open at 118 N. Water Avenue in early summer.
The brand has been part of the Mt. Juliet community since 2022. Moving forward, Ragan wants to see where this expansion leads them to go next.
“I didn’t go looking for the restaurant business. It found me. I knew that at the end of the day, it was about people, about community. We all mean something. It was a great opportunity to get people together, slow down a little bit and eat healthier,” Ragan said. “This opportunity came across us, and we just felt that we just couldn’t ignore the opportunity at hand as far as being able to get into a community, especially this downtown community.”
The new space will seat 90 people and is currently undergoing renovations. When completed, its design will feature memorabilia that offers a nod to the history of the area. It will also feature a milkshake bar — a new addition specifically available at the Gallatin location.
“We’re trying to gather some stuff so we can pay homage to the city for what all’s transpired here before our days,” Ragan said. “That’s what we’re about — just getting back to simplicity and enjoying good company over a good plate of food that’s been handcrafted and put together.”
The Paper Mill serves comfort food with an emphasis on fresh ingredients. Menu items include chicken and waffles, grit bowls, hot piggy benedict, breakfast tacos, loaded potato hash, salads, omelettes and sandwiches. Ragan said to expect some new items at the Gallatin location, such as the milkshakes.
