Chef Tsubasa Tamaki is bringing his Pizza Studio Tamaki (PST) to New York. Opening its first permanent U.S. store, the restaurant will be located in the East Village on May 5, 2026. It will bring Chef Tamaki’s popular Tokyo-style Neapolitan pizza to New York.

In February 2026, Pizza Studio Tamaki held a successful two-day pop-up. The pop-up helped build momentum ahead of the restaurant’s upcoming opening. The restaurant also has locations in Tokyo, Bangkok, and Singapore.

Chef Tamaki was ranked 10th in the pizza category by The Best Chef Awards 2025. He is known for his precise technique and for pizzas made with 30-hour fermented dough.

Chef Tamaki is known for his blend of Japanese and American flavors in his pizzas. He also adds Japanese cedar shavings to the fire for a subtle smoky aroma in the crust. These flavors come through in every pizza served at the restaurant.

The menu at Pizza Studio Tamaki includes signature pizzas like the Tamaki, Margherita, 5 Formaggi, Bismarck, Bianca, and Diavola. Small plates such as charred broccolini, risotto arancini, and signature meatballs will also be available. Drinks will include Moody Tongue beers, with a focus on Japanese citrus lagers.

The restaurant will operate Tuesday through Thursday from 5 p.m. to 10 p.m., and Friday to Saturday from 5 p.m. to 11 p.m. The location has only 65 seats and can be reserved in advance via SevenRooms.

The opening brings a Tokyo-based, internationally known pizza concept to the East Village dining.
