A new seafood-focused cocktail and raw bar is opening in Brooklyn. Bar Susanne will serve seafood sourced from Long Island’s North Fork and other nearby New York waterways. The space will also feature a coastal-inspired design with waterfront influences.

Bar Susanne Opens this Week

Bar Susanne is opening in Williamsburg with a seafood-driven menu and raw bar program. The restaurant is opening on May 15, 2026, and is located at 6 River Street next to Cafe Susanne. The restaurant comes from James Beard Award-nominated designer Matthew Maddy and partner Marisa Maddy Ripo.

Bar Susanne adds another seafood-focused concept to Brooklyn’s waterfront dining scene. It is created by the same team behind Cafe Susanne, an all-day cafe. The food destination brings fresh seafood from the nearby waterways to the table.

Executive Chef Jackie Carnesi Leads a Seafood-Focused Menu

Executive Chef Jackie Carnesi, formerly of Kellogg’s Diner and Nura, leads the kitchen at Bar Susanne. The menu focuses on seafood and raw bar dishes using ingredients from Long Island’s North Fork. Featured dishes include shrimp cocktail, scallop crudo, crab salad, grilled squid, fluke Milanese, and roasted chicken. The restaurant also offers caviar service and creative desserts.

Milos Zica oversees the drinks menu at Bar Susanne. The beverage program features martinis, agave-based cocktails, house signatures, and low-ABV options. The drinks are inspired by coastal flavors and global ingredients.

Inside the Coastal-Inspired Cocktail Bar and Restaurant

The restaurant features a 75-seat space with a warm, coastal-inspired design. It features amber lighting, marble accents, recycled oak floors, and artwork by female artists. The artwork includes pieces from Matthew Maddy’s mother and a mural by Marisa Maddy Ripo.

The design draws inspiration from the Brooklyn waterfront and the feminine energy behind the restaurant’s namesake. A long mirror above the marble bar reflects the waterfront views, creating a bright, inviting atmosphere. The design combines artistic details, natural textures, and seaside inspirations to create an elegant yet comfortable setting.

Bar Susanne pairs a seafood-driven menu with a cocktail program centered on martinis and agave-based drinks. The restaurant joins Williamsburg’s growing lineup of waterfront dining concepts with a menu centered on locally sourced seafood.
