A new restaurant and cocktail bar inspired by the Garden of Eden is headed to Boston’s Downtown Crossing.
Earlier this month, the Boston Licensing Board approved plans for restaurateurs Steve Bisson and Jack Sullivan to take over the current home of French Quarter at 545 Washington St and transform it into a concept called Seven. French Quarter is still operating, and a timeline for the transition has not yet been announced.
According to a report from Universal Hub, the forthcoming 90-seat venue will pair immersive design elements with a playful cocktail program centered around the seven deadly sins. Guests can expect seven signature cocktails, each inspired by a different sin, alongside seven spirit-free counterparts.
Beyond the drinks, the team says the menu will focus on fresh, high-quality ingredients with options for a wide range of diners, including omnivores, vegetarians, and vegans.
The restaurant’s atmosphere is also set to lean heavily into the biblical theme. During the licensing hearing, attorney Tom Miller explained that the ceiling will be painted to resemble the sky, complete with adjustable lighting designed to shift colors depending on the mood and ambiance.
The project received enthusiastic support from former Boston City Councilor and current Apex Rooftop Bar & Lounge owner Tito Jackson, who praised both the concept and the team behind it. Jackson noted that Bisson, who lives at the nearby Millennium building, previously helped him launch his own lounge and dispensary ventures.
Seven is expected to operate from 11 a.m. to 2 a.m. Sullivan, who is a partner at New Jersey-based East Coast Saloons Hospitality Group, confirmed the project with What Now Boston last week, noting that an official press release is forthcoming.
