Carbonara to Serve up Italian Classics in Gainesville

The celebrated restaurant will open its second location in July.

Summer of 2026 promises to be a particularly memorable one for Gainesville foodies. Carbonara, a celebrated Italian restaurant that has earned critical raves, has chosen the neighborhood for its newest home and owner Chef Mike Cordero anticipates being customer-ready in July.

 

The  14081 Promenade Commons Street restaurant will be Carbonara’s second home, joining another location already open in Arlington. The Gainesville storefront, which previously housed Bar Louie, will be significantly larger than its Arlington counterpart. Carbonara will be able to accommodate around 250 customers.

 

Carbonara’s menu of Italian favorites, prepared with “the finest ingredients and a touch of nostalgia” has garnered considerable praise and high-profile fans. Chef Mike Cordero has created a selection of dishes sure to win over a wide range of foodies, and includes options like Clams Oregenato, Chicken Culet Parmigiana, Gnocchi della Mamma, and Shrimp Scampi.

 

Chef Cordero was kind enough to speak with What Now DC about Carbonara’s legacy-its cultural impact, its fanbase, and its future in Gainesville. He explains: “Carbonara has truly been such a blessing. We were fortunate to win many awards early on, and the restaurant quickly became very popular. Last year, we were honored to be named one of Yelp’s Top 25 Restaurants in the United States — an award I truly cherish.”

 

Carbonara’s delectable cuisine has made it an indelible figure in the local dining scene. Cordero states: “Over the years, the restaurant’s popularity has continued to grow, especially with the support of so many celebrities, public figures, and TV personalities from around the DMV visiting us. We’ve had the honor of hosting former President Joe Biden, former Governor Glenn Youngkin, along with many well-known media personalities throughout the region.”

 

Cordero and the Carbonara team are ready to hit the ground running at their new Gainesville home. He says: “We’re incredibly excited to bring our old-school Italian style to Gainesville — featuring fresh pasta made in-house daily, house-made fresh mozzarella, specialty homemade pastas, and our signature desserts.”

 

Locals won’t have to wait too much longer to sample Carbonara’s remarkable fare; keeping in mind that permitting can impact final timelines, Chef Cordero anticipates opening the second week of July.
