‘One Stop for All the Asian Comfort’: Global Restaurateur To Debut Pebble Onebird

Pebble Onebird‘s concept comes from restaurateur Taichi Ishizuki, whose experience spans restaurant operations across the United States, Asia, Europe, and Canada. The new restaurant concept, centered on Asian comfort food, is expected to open in North Austin at 12129 Ranch Road 620 N in early July, pending final permits and inspections. This location will serve as the brand’s first U.S. outpost and a testing ground for future expansion.

WhatNow Austin reached out to Ishizuki, who shared that starting in Austin was a deliberate choice. After helping expand restaurant brands across multiple markets over the past decade, he viewed the Texas capital as the ideal place to launch his next venture. “I think Austin is the right place to start for my next chapter. Based on the culture, the city growth, and all the marketing industry, my gut feeling told me maybe I should start here,” Ishizuki said.

The founder relocated from Portland, Oregon, to Austin to oversee the opening. He described the city’s multicultural landscape as a key factor behind the decision.

The restaurant traces its roots to Tokyo’s Shibuya district, where the first location opened in August 2025. The concept’s reception in Japan has spurred plans for further expansion there, while the Austin restaurant represents a version tailored specifically for American diners. Pebble Onebird is designed around a simple premise: bringing together several categories of Asian comfort food under one roof, with chicken serving as the common thread throughout the menu. “I thought of a place where people can say, ‘Let’s go eat ramen. Let’s go eat fried chicken. Let’s go eat sandwiches,’ all in one spot,” Ishizuki told WhatNow Austin.

Menu offerings are expected to include ramen, rice dishes, sandwiches, soups, breakfast items, and chicken-focused specialties inspired by different Asian culinary traditions. While the concept draws on techniques and flavors from across the continent, Ishizuki emphasized that the restaurant is not intended to be a fusion restaurant. “This is centered on chicken for all of Asia,” he said.

Pebble Onebird’s interior is expected to feature a fully open kitchen surrounded by chef-counter seating, allowing guests to watch food preparation in real time. “I don’t have anything to hide,” Ishizuki said. “I completely removed all of the walls inside the restaurant. It’s 100% open.”

The concept reflects the lessons Ishizuki learned over years of operating international restaurant businesses, including overseeing the growth of the ramen brand AFURI across multiple markets as its former Group CEO. “The last ten years, I could see global markets. Now I know what the American market needs from this type of Asian concept,” Ishizuki told WhatNow Austin.

Austin will also serve as a proving ground for the brand’s long-term ambitions. While Ishizuki has extensive experience with international franchising, his immediate focus is refining operations and gathering customer feedback before accelerating growth. “I hope to expand and grow,” he said. “But first, I need to concentrate on this first location.”

If the Austin debut performs as expected, Ishizuki believes Pebble Onebird could eventually expand well beyond Texas.
