Popping Yolk Cafe, the brunch concept known for its creative takes on comfort-food classics, is expanding again in California with a new franchise agreement in Buena Park. The new location will be operated by Javier and Rose Zamora, together with their children Ethan Zamora, Nathan Zamora, and Tiffany Westmoreland, according to RestaurantNews.com.
Company founder and CEO Jason Tsai highlighted Buena Park as a strategic fit for the concept, citing its mix of families, residents, and tourist traffic. He noted that the brand’s menu and guest experience have consistently resonated across diverse markets, from suburban neighborhoods to high-traffic urban corridors.
Although the deal has been confirmed, Tsai told WhatNow that the exact site has not yet been finalized. “At this stage, we are still in the site selection process, so we do not yet have a confirmed location or opening timeline,” he said. “However, we are optimistic about the market and look forward to bringing Popping Yolk Cafe to Buena Park in the future.”
For the Zamora family, the decision to invest in Popping Yolk Cafe was driven as much by the food as by the business opportunity. Rose Zamora recalled that she was initially hesitant about the concept because breakfast restaurants had never been of particular interest to her.
During an early meeting with founder Jason Tsai, she told him she was “not a breakfast person”, but Tsai encouraged her to try the menu anyway, suggesting she order her own meal rather than sample a few bites. Rose told WhatNow the experience ultimately changed her perception of the brand. “The food was amazing,” Zamora said, adding that, in her view, Popping Yolk stands apart from other breakfast concepts she has tried. The quality of the menu helped convince the family that the brand was worth bringing to their community.
With the motto “Breakfast is a meal. Brunch is a culture”, Popping Yolk Cafe’s menu embraces a creative approach to traditional breakfast, blending familiar comfort foods with globally inspired flavors. Among its standout offerings is the Kimchi Butter Fried Chicken Benedict, a fusion take on the classic eggs Benedict that layers poached eggs, crispy fried chicken, and kimchi atop an English muffin, finished with kimchi butter sauce and hollandaise. The dish exemplifies the brand’s approach of reimagining traditional brunch staples with bold and unexpected flavor combinations.
