Jonathan Vargas is a longtime entrepreneur—and, as it turns out, a longtime sandwich maker. Among the businesses the local jack-of-all-trades has opened was a smoke shop where, almost by chance, Vargas started making sub sandwiches for customers. The sandwiches were a success; the smoke shop Vargas says he didn’t like so much.
Despite loving making the food, Vargas told What Now on Thursday, “it just wasn’t the same. Because it’s a smoke shop. You’re giving people the ability to feed their addiction. That just didn’t feel like the way to serve the Lord.”
But recently, Vargas has seized on a different opportunity, one that will allow the entrepreneur to make food the focus of his business. Next month, he’s opening The Pit Stop, a deli and sandwich shop, at 4911 Wayside Dr, inside the AutoNation Ford dealership in Sanford.
The Pit Stop will serve up sub sandwiches, pizza, hot dogs, and other foods to customers and passersby at the dealership. (You won’t have to buy a car to try out what Vargas is cooking up.)
Signature Sandwiches include The Pit Stop (turkey, cheddar, lettuce, tomato, mayo), the General Managers Special (a turkey Reuben), and the F-250 (Ham, salami, provolone, tomato, onions, mayo, salt & pepper and oil with vinegar).
“Basically, I heard they wanted to rent the space, and I just jumped on the opportunity. I was really lucky to get it,” Vargas said. Reflecting on the career that has led to this next venture, Vargas added, “It was always right in front of my face. I always had a passion for cooking, owned food trucks, served food at bars. I’m looking forward to getting started.”
