Popping Yolk Cafe, the Southern California brunch chain known for its creative egg-forward menu and laid-back California vibe, is coming to Elk Grove as part of the Project Elevate development near Costco on Elk Grove Boulevard, franchisee owners Eileen and Alan Dichoso confirmed to What Now Sacramento. The location will be the brand’s first in Northern California, with construction expected to begin in 2027 and an opening targeting spring or summer 2028.
The menu blends classic American breakfast staples with bold Asian-fusion twists, featuring dishes like the Norwegian Benedict with smoked salmon, a Kimchi Spam Omelette, Ube French Toast, and the signature Popping Yolk Burger. Specialty coffees, fresh juices, and cocktails round out the drink menu, with unlimited coffee a staple of the experience.
Founded by Jason Tsai, a Taiwan-born entrepreneur who moved to Southern California about 16 years ago, Popping Yolk launched its first location in Alhambra and has since grown to six cafes spread across the Los Angeles area. The slogan is simple: “Let there be brunch.”
The Elk Grove spot will be one of the most anticipated pieces of a larger mixed-use development that will also include retail shops and a hotel, with CenterCal Properties serving as the landlord. No address has been confirmed yet as the project is still in early planning stages.
