Hypnos Coffee, the proudly Hispanic and queer-owned specialty café that has been turning heads since its 2023 debut, is bringing its second location to 807 NW 21st Avenue in Portland this August, co-founder Michael Taylor confirmed to What Now Portland. The new space takes over the former Bar Mingo, a beloved wine bar that quietly closed after more than two decades on one of Northwest Portland’s most charming blocks.
The buildout is anything but subtle. Hypnos has completely reimagined the space around a 19-foot stainless steel statement bar anchored by a Slayer Steam LP espresso machine in bone beige, with Audo Copenhagen Hashira pendant lights overhead, oiled oak custom display cabinets, and a nearly 30-foot custom upholstered peninsular banquette. All under original wood ceilings with two skylights that flood the room with natural light. The design was handled by Portland’s Fieldwork Design, and the result is the kind of space where the bar, the machine, and the barista are the whole show.
“We aim to create inspiring minimal and modern design where the coffee, machine, and barista can be the main focus,” Taylor told Sprudge.
The coffee program is considered equally. Hypnos sources exclusively single-origin coffees, with a new pour-over menu featuring local roaster Coava Coffee and Copenhagen’s La Cabra. House-made syrups, ceremonial grade matcha from LA’s Rocky’s Matcha, and pastries from Bakeshop round out the menu, a tightly curated lineup that reflects the brand’s philosophy of leading with quality over quantity.
Founded by Taylor and partner Andres Echeverria, Hypnos has built a loyal following since opening its first location for its welcoming atmosphere, striking aesthetic, and a genuine commitment to community, highlighting local Portland artists. The NW 21st location marks a natural next step for a brand that has outgrown its debut and is ready to plant a bigger flag.
