Acornhouse, a new cocktail bar focused on Canadian ingredients and seasonal dishes, is getting ready to open in Toronto’s Dovercourt Village area near Davenport Road and Ossington Avenue.
The new bar is expected to open in late fall, according to UrbanCity. Acornhouse was founded by James Park, Jacob Homoki, and Kana Hayashi, three hospitality professionals with experience in Toronto and abroad. All three founders have previously worked at Mother Cocktail Bar, while Homoki will serve as Executive Chef overseeing the food menu. An exact opening date has not yet been announced.
The concept behind Acornhouse is inspired by the relationship between squirrels and acorns, with the founders comparing the process of gathering acorns to creating something that contributes to future growth. James Park tells the publication that the idea reflects the team’s focus on collecting and preserving Canadian ingredients while building a concept rooted in the country’s landscapes and producers.
The team has spent years foraging, visiting farms across Canadian provinces, and experimenting with local ingredients to develop the bar’s menu. The cocktail program and food offerings will highlight seasonal ingredients sourced from across Canada, with a focus on showcasing products that are often overlooked.
Jacob Homoki will lead the kitchen, bringing his culinary background to a menu designed around Canadian flavors. The dishes are expected to complement the cocktail program, incorporating ingredients prepared through different methods, including fermentation and preservation.
Acornhouse’s founders have built their hospitality backgrounds through work in Toronto’s food and beverage industry, including their time at Mother Cocktail Bar. The new bar will mark the next step for Park, Homoki, and Hayashi as they create a space centered around Canadian ingredients, local producers, and seasonal offerings.
