Pizza A Modo Mio, the restaurant “where Brooklyn meets Charleston hospitality,” has grown to include three full-time restaurants in the Charleston area. Now, Chef Michael Pitera is preparing to launch a fast-casual sister concept that will offer a speedier approach to the same great quality food.
The fast-casual approach is, in part, inspired by the mall’s proximity to the Medical University of South Carolina, which has purchased part of the mall.
“With MUSC being right there, you have people coming on their lunch break. They can’t do a 20-minute turnaround time for a full pizza. So we wanted to be able to offer a different menu style, to pull certain things off our menu that we can streamline for the food court.”
The menu will take a build-your-own approach, featuring personal pizzas equivalent to two or three slices: guests pick their own toppings, and the pizza is ready to eat in 2-3 minutes.
“It’s a Roman-style dough, which is high-hydration, a very crispy and soft pizza.”
The menu will also feature chopped salads—with your choice of base (romaine, arugula, mixed) plus four toppings of your choice—and pastas with a choice of four sauces: vodka, pesto, marinara, and Alfredo. For dessert, choices like gelato ice cream sandwiches, cheesecake, and cannoli.
“We’re excited to be a part of the mall and what MUSC is doing with it. They’re going in there and making it really nice, and they’re getting people coming back to the mall. We can’t wait to be part of the Citadel.”
