A health-focused fast-casual chain with more than a dozen locations across the western United States is making its Texas debut in Leander. According to public filings, Aubergine Kitchen plans to open at 408 San Gabriel Parkway, Building 2, Suite 101, within the Northline ATX development, with construction completion date targeted for August 2027.
What Now Austin reached out to co-founder Elcio Zanatta to inquire about the opening timeline, but did not receive a response prior to publication.
Aubergine Kitchen’s menu includes bowls, salads, plates and breakfast items, built around fresh, quality ingredients and a clean dining environment. According to the website, the concept has redefined fast-casual dining with a commitment to zero seed oils, no added sugar, and globally inspired dishes crafted from whole ingredients. The chef behind the plates is Mirian Zanatta, co-founder and head chef, who built the menu alongside her husband Elcio.
Aubergine Kitchen currently operates 13 open locations across Arizona, Utah, Nevada, and Idaho, according to What Now’s previous coverage of the brand’s Arizona expansion, which also noted two new locations planned for Phoenix and Queen Creek. The Leander location would mark the brand’s first foray into Texas.
The opening places Aubergine Kitchen at Northline ATX, Leander’s new downtown district. The development has been growing steadily and is rapidly filling with new dining concepts What Now has previously covered several openings in the same corridor, including Pepper Lunch.
