Cuvee Club, a new after-hours Champagne lounge, is opening inside the Mimosa House restaurant at 6861 Douglas Blvd in Granite Bay’s Marketplace at Granite Bay Center. Devin Dedier, culinary director of Dedier Family Company, said the concept is targeting a mid-September opening, once a run of outside commitments wraps up.

The Dedier family runs all nine Mimosa House locations across the region, known for their brunch-focused menu, including a recently opened Curtis Park location and Vacanza Romana in El Dorado Hills. Cuvee Club will operate out of the same Granite Bay space once Mimosa House closes for the day, offering French Champagne, Italian prosecco and domestic sparkling wines from regions like Napa Valley.

Dedier described the food side as upscale, scratch kitchen versions of what he calls greasy spoon classics, including sandwiches, burgers and shareable plates like loaded fries. He said the idea grew out of wanting a place he would actually want to go to himself, something casual enough for a T-shirt and shorts but still built around quality.

Once open, Cuvee Club will run starting at 4:30 p.m., with closing time left flexible. According to the Sacramento Business Journal, the concept could expand to the Curtis Park Mimosa House location by fall if Granite Bay performs well, and he could eventually see a standalone Cuvee Club location down the road.
