A new restaurant is bringing a lineup of creative cocktails to the East Village.
Circolo, led by longtime restaurant industry professionals Giuseppe Santochirico and Ailin Yang, will debut at 127 E. 7th St., according to business filings.
The space will accommodate up to 35 seated guests, along with a 9-foot bar and additional standing room.
Circolo will combine Italian flair with Chinese influences.
The menu will feature garlic-glazed parmigiana with crisp layered parmigiana, roasted garlic, lacquer, aged parmigiana and basil oil; thrice-cooked taro fries with rosemary salt and chili-honey aioli; and grouper carpaccio with citrus oil, capers, Calabrian chili and micro fennel.
To satisfy a sweet tooth, Circolo will serve boozy tiramisu, boozy gummies and gelato.
The drink program will draw inspiration from art, music and film, with drinks organized into four categories: “Innocence,” featuring a rosy, booze-free cocktail inspired by Barbie; “Selflessness,” with an iconic reverse Manhattan paying homage to Lady Liberty; “Struggle,” featuring a Martinez reflecting Vincent van Gogh’s Starry Night; and “Abyss,” with a dark, rich cocktail evoking Pink Floyd’s “Comfortably Numb.”
An official opening date has not yet been announced. Once open, Circolo plans to operate Monday through Thursday from 4 p.m. to midnight, Friday and Saturday from 4 p.m. to 2 a.m., and remain closed Sundays.
