Based in Lakeland, Ellie B’s Ice Cream is a mobile ice cream concept that “serves signature soft serve ice cream from our vintage trailer, creating a fun, photo-worthy dessert experience for weddings and events.”

“Hi, I’m Amanda! Founder & owner of Ellie B’s Ice Cream,” says an introductory post that Ellie B’s published on Instagram last year. A little about me: “Married to my high school sweetheart, Guy (he built our adorable vintage trailer by hand!)… I created this business as a creative outlet and a way to share my lifelong love of ice cream and events.”

Now, Ellie B’s Ice Cream appears to be making moves in the brick-and-mortar world with its first ice cream shop. This week, What Now came across plan review paperwork filed by owner Amanda Lalonde for Ellie B’s Ice Cream and Sweets, which would open at 204 South Collins St, Suite B, in downtown Plant City.

What Now reached out to Lalonde on Tuesday to ask about plans for an Ellie B’s expansion. Lalonde was not immediately available for comment.

“Thanks for being here,” the Instagram post continues. “What a fun journey we’ve had so far getting to be a small part of the most special days of your life. I’m so grateful for every cone, every like, share and booking. Your support has made this dream a reality!”
