A Newton Centre pastry shop known for blending French pastry techniques with Brazilian flavors is expanding to Wellesley.
SALT Patisserie is preparing to open its second location at 68A Central Street in Wellesley Square, reports Boston Restaurant Talk. Founder and local chef Thiago Silva recently gave followers a first look at the future location, sharing video footage of the window signage going up.
“We love Wellesley as a location because we want to bring quality over quantity to the region,” Silva told What Now Boston. “We aim to sell out our goods daily, similar to our Newton location. As a chef, a pain point for me is visiting a bakery near closing time and seeing a full display case of baked goods.”
Founded in July 2022, SALT Patisserie puts a Brazilian spin on the French pastry traditions Silva learned through his culinary training. The Wellesley shop will mirror the original Newton menu, with all baked goods made on site. Offerings will include cakes, éclairs, tiramisu, brownies, cookies, muffins, croissants, and more.
Beyond the pastries and desserts, the patisserie serves fresh-baked artisan breads, sandwiches, salads, focaccia pizza, specialty espresso drinks, matcha, and other teas.
Among SALT’s signature sweets is the Quatro Leites Cake, Silva’s take on the classic tres leches cake, made with four types of milk and homemade dulce de leche. SALT also serves Pão de Queijo, a naturally gluten-free Brazilian cheese bread that adds another nod to Silva’s roots.
Silva has catered to high-profile clientele, including celebrities such as Derek Jeter, John Legend, and Iris Apfel, but SALT’s philosophy is that exceptional pastry shouldn’t be reserved for the rich and famous. The patisserie’s website states that “the quality offered to celebrities should be the same extended to all its patrons,” with pastry serving as a vehicle for creativity, passion, and innovation.
The Wellesley expansion is part of SALT’s plans for continued independent growth. According to The Swellesley Report, the ownership group has turned down private equity buyout offers in favor of expanding the business on its own. The team is also reportedly in active discussions for potential additional locations in downtown Boston and Harvard Square.
SALT Patisserie’s Wellesley Square location is currently slated to open in late October 2026, though Silva noted that “many factors must align for that to happen” as the team awaits city permitting. When it debuts, the new patisserie will have seating for 22 guests, including 18 traditional seats and four stools at a bar, allowing customers to settle in with a pastry and coffee.
