A health-focused kitchen specializing in balanced, prepared meals is expanding its footprint, with significant growth on the horizon.
Fork to Fit Kitchen will open at the Enrico Heights Retail Center, with franchise owner Ethan Gonzalez overseeing the location.
“It’s a great spot. There’s plenty of traffic all day. The parking lot is always packed,” Gonzalez told Whatnow San Antonio.
Alex Velasco and Jose Guerra founded Fork to Fit Kitchen after meeting in 2016, when Velasco worked as Guerra’s personal trainer.
The duo launched the concept inside the gym where they met, stocking a single-door refrigerator with prepared meals for members. They made the meals at Guerra’s family restaurant, The Patio on Guerra, turning their shared passion for food into a business.
“I started Fork to Fit Kitchen because I believe healthy food should be convenient and accessible,” Alex explains. “Coming from a background in fitness and nutrition, I saw how challenging it can be for busy people to find balanced meals that taste good. I wanted to create something better—a place where people could get real, nutritious food without sacrificing time or flavor,” Velasco said via the website.
As demand for its meals grew, the duo opened their first brick-and-mortar location in 2018. Fork to Fit Kitchen now operates 10 locations across the Rio Grande Valley.
“Fork to Fit makes it very easy for anybody to just grab-and-go meals and learn while reaching their goals. I love taking care of my health and helping other people, so I felt this was a big opportunity for me,” Gonzalez said.
The breakfast menu features overnight oats, steak and eggs, protein pancakes and omelets.
For lunch and dinner, Fork to Fit Kitchen offers a variety of meals featuring seafood, red meat and poultry, along with preset bowls from the grill. Guests looking for lighter fare can choose from salads, croissant sandwiches, acai bowls and chia seed pudding.
Each menu item lists its calorie count, protein, carbohydrates and fat content.
The upcoming location will feature a distinct interior design from existing locations, though the theme remains in development.
Gonzalez looks forward to bringing his vision to the brand.
“I’m excited to see how well it does,” he said.
This isn’t the only location in the works, as another is set to open in Culebra at the end of October, with additional locations planned for Rio Grande City, Brownsville, Kyle, Harlingen and Boerne.
