Cholapink Opens in New York City’s SoHo
Cholapink is a new Peruvian fast-casual restaurant that opened at 32 Spring Street on October 28. It is a collaboration between Peruvian chef Jaime Pesaque and global music star Daddy Yankee. Chef Jaime Pesaque is recognized by the World’s 50 Best.
The menu takes inspiration from anticuchos, traditional Peruvian grilled skewers. Pesaque’s menu centers on fire-grilled skewers and other familiar Peruvian dishes, accompanied by the ajís, marinades and bold sauces that define the cuisine. It also features ingredients sourced from across Peru and the Amazon.
Cholapink offers 60 seats and features a design that is inspired by Peruvian culture and New York City. Its interior combines elements like timber, stone, and metal with pink walls and other materials. The restaurant’s name, Cholapink, comes from the vibrant fuchsia hue of traditional Andean polleras.
