Helmed by owners Ryan and Erica Chody, Creasy’s BBQ has built a following as a caterer in Georgetown, making appearances at local farmers’ markets.
“We do authentic Central Texas barbecue,” Ryan Chody told What Now on Friday. “We do brisket, turkey breast, ribs, pulled pork—traditional barbecue fare.”
Now, Creasy’s is preparing to set up shop with a new food truck launching May. A celebration will be held in Georgetown on May 9, where Creasy’s BBQ will be serving that barbecue fare just outside Tejas Meat Market. Then, on May 15, the truck will launch in its more permanent home at the Sunset on the ‘Rise food truck park, located at 1 Indian Meadows Dr in Round Rock.
“Creasy’s BBQ grew from years at the pit, tending a steady fire and refining the craft of true Texas barbecue,” says the Creasy’s BBQ website. “What started as a personal passion for smoking meat the right way—low, slow, and without shortcuts—slowly became something friends, family, and neighbors kept asking for again and again. Over time, those backyard cooks turned into gatherings, those gatherings turned into requests, and Creasy’s BBQ was born from the simple idea that great barbecue has a way of bringing people together.”
Creasy’s is named for Chody’s “dog and best friend,” Chody said. “He has passed away now, but he used to sit with me while I was learning all these different approaches to brisket. His patience and loyalty have inspired us in what we do.”
