Jersey Mike's Subs is expanding its Austin-area footprint with a new Cedar Park restaurant

According to public filings, Jersey Mike’s Subs plans to open a new location at 2301 W Parmer Lane, Unit 204, in Cedar Park, within Williamson County, with construction completion on October 2026.

What Now Austin reached out to franchisee Jason Odom who confirmed that the Cedar Park location plans to open at towards the end of 2026, aiming for a November or December opening.

Jersey Mike’s is known for its fresh-sliced meats and cheeses, made-to-order subs served on freshly baked bread, and its signature “Mike’s Way,” topped with onions, lettuce, tomatoes, oil, vinegar, and spices. The menu also includes hot and cold subs, wraps, and bowls.

According to Odom, the new location was chosen for its excellent visibility and ample parking. “People living nearby deserve easy access to a Jersey Mike’s,” he told What Now Austin.

Building relationships with the community is also a priority for Odom, who said he hopes this location will give back and become a small pillar of the Cedar Park community. “We will be giving away free subs and raising money for a local charity during our grand opening,” he said.

The Cedar Park filing adds to a steady stream of Jersey Mike’s expansion across the Austin area.What Now Austin previously reported on franchisee Mike Cullen’s third Austin-area location, continuing a family legacy that began when his brother and sister-in-law opened the city’s first Jersey Mike’s more than two decades ago. The brand has also been expanding further into the region’s outskirts, including a new spot in Bastrop’s Sendero development.

Founded in Point Pleasant, New Jersey, in 1956, Jersey Mike’s has grown into one of the largest sub chains in the country, with thousands of locations nationwide.
