According to public filings, PopUp Bagels plans to open at 11501 Rock Rose Ave., Suite 152, with a construction completion date targeted for mid-September 2026.
What Now Austin reached out to Don Meij, CEO of Lone Star Bagels, the Texas franchisee behind the expansion, who confirmed the project but declined to share a specific opening date at this stage.
PopUp Bagels’ offer encourages guests to rip whole bagels fresh from the oven and dunk them into a variety of schmears, a ritual the brand calls Grip, Rip and Dip. The menu offers five bagel varieties: plain, everything, salt, poppy seed, and sesame, available in bags of three, six, 12, and 30, with rotating weekly schmear flavors.
The Domain Northside filing marks the first confirmed Austin location for the brand, which signed a deal with Lone Star Bagels to bring at least 12 shops to Texas across Austin, Dallas-Fort Worth, Houston, and San Antonio, according to a company press release. What Now San Antonio has also covered this expansion. The brand already opened its first Texas location in Dallas in April 2026.
Founded in Westport, Connecticut, in 2020, PopUp Bagels grew into one of the most well-known bagel brands in the country, fueled largely by social media and a fiercely loyal following.
