The Flying Biscuit Cafe is slated to open in West Ashley in early January. Franchisee Summer Lee also owns the Greenville Flying Biscuit, which opened in 2019.

The West Ashley location will be open Monday through Sunday and will serve breakfast all day as well as lunch. The menu includes chicken and waffles, hash browns, grits, pancakes, French toast, scrambles, benedicts, burgers, sandwiches and, of course, biscuits. It also has a variety of vegan and vegetarian options.

Lee had been a faithful Flying Biscuit fan for more than 20 years before opening her own store and even used to drive out of state to get her fix, the Greenville Journal previously reported. Now, her plans to open the cafes throughout South Carolina seem to be coming to fruition.

The Southern-inspired all-day breakfast institution started as a single location in Atlanta more than 30 years ago. Today, the chain has 29 locations throughout several states and is best known for its grits and biscuits – baking almost 5,000 biscuits per week.

Lee’s son, Cortland Whitaker, used to help her run the Greenville location. Cortland tragically passed away in October at the age of 28.

Lee could not immediately be reached for comment.
