A new sushi concept, Sharigato, is nearing its debut at The Joinery in Optimist Park, 420 E 22nd Street, chef-owner Shari Lynne Robins told WhatNow Charlotte.
“We will officially launch in the next few weeks,” Robins said, adding that the opening timeline depends on final health inspection approvals.
Sharigato will bring an interactive sushi bar experience to Charlotte, where guests can sit around the counter and watch hand rolls prepared to order in front of them, according to the company’s website.
Robins, whose background spans restaurant kitchens and product development, brings more than two decades of culinary experience to the concept, shaping Sharigato as a focused, counter-style dining experience. “It will be Charlotte’s first hand roll bar,” she said.
The menu will feature a concise selection built around ingredients such as salmon, scallops, blue crab, and toro, alongside vegetable-forward options like eggplant and mushrooms. A Sharigato bowl will also be available, offering a similar lineup of ingredients in a bowl format, along with sides such as edamame, seaweed salad, and shishito peppers. A beverage program including sake, beer, and Japanese-inspired cocktails is also planned.
The approximately 24-seat space will be part of The Joinery, a mixed-use development in Optimist Park with multiple retail and dining concepts in the works, where Sharigato will be among several tenants expected to open this year.
