A ramen chef from Mongolia has more expansion plans in west Chicagoland.

From The Daily Herald, Tatsu Ramen has now opened their second location in Crystal Lake at 230 W Virginia Street #250. Chef Erdane Sainnyambu originally debuted his Elgin spot in 2021 as a small family business. Along with the opening, he is in talks for a new location in DeKalb sometime next year.

The ramen spot serves broth bowls that have been simmered for 24 hours. A couple popular ramens include their tonkotsu, with a house blend of eleven spices and egg noodles. Their spicy miso ramen features their house miso tare with a spicier tonkotsu base. The business also serves appetizers like shrimp and edamame.

“Tatsu Ramen House opened in Elgin in 2021 — a small, family-owned room rooted in tradition and inspired by Japan’s culinary heritage. Chef Erdene built the menu around one stubborn idea: real broth takes real time,” says the description on their website.

Tatsu Ramen’s newest location recently opened at the Crystal Lake Plaza on the east side of West Virginia Street. It joins Krystal Thai, as well as Mug’s Pizza & Ribs. DeKalb would be the furthest out from Chicago the restaurant has gone, and their Elgin location is at 2490 Bushwood Drive.

The grand opening for the Crystal Lake spot was on May 26. Sainnyambu said the response from the community was pleasant, and it gave him optimism about opening another location. He said he has been going back and forth with multiple properties.
