Denver’s Asian dining scene is about to get a whole lot busier as restaurateur Shuang “Sherry” Crossland moves ahead with plans for six new restaurants across the metro area.
Crossland, who operates concepts including Go Fish Sushi, Chubby Fish Sushi, Miya Moon and SYC Concepts, has several projects in the works that are expected to open between this fall and early 2027.
The expansion will bring new restaurants to Denver, Aurora, Arvada and Broomfield, with concepts ranging from dim sum and sushi to Japanese izakaya dining according to the Denver Business Journal.
One of the projects is a fourth Miya Moon location at 6365 E. Hampden Ave., Suite 101, which is targeted to open in September.
Miya Moon is one of Crossland’s more established concepts, centered around dim sum, tapas-style dishes and Asian-inspired small plates. The new location will add another outpost for the restaurant as Crossland continues developing new concepts alongside her existing restaurants.
Crossland is also expanding Chubby Fish Sushi, with two new locations planned. The first is headed to 14302 E. Cedar Ave., Unit B, in Aurora, with an opening expected in November or December. A second Chubby Fish is planned for Arvada, although an address has not yet been announced. That restaurant is currently expected to open in February 2027.
The other major part of the expansion is SYC Concepts, Crossland’s more upscale restaurant group. The initials stand for Shuang “Sherry” Crossland, and the concepts represent a shift toward more elevated Asian dining, with greater emphasis on restaurant design and the overall hospitality experience.
One of the upcoming restaurants is Yuzu Izakaya, planned for 2055 W. 136th Ave., Suite B106, in Broomfield. The Japanese-style restaurant is expected to open in October or November.
The biggest project is planned for Cherry Creek, where two SYC concepts will share a two-story space at 2817 E. 3rd Ave. The lower level will become Sushi 37, while SYC Omakase will occupy a smaller space upstairs. The combined project is also targeted for a September opening. The two restaurants will add a more upscale sushi experience to Crossland’s growing portfolio.
