Currently located at Summerlin Takeout, Doanburi Premium Sushi is a high-end sushi and contemporary Japanese restaurant concept from Chef Jae Doan and Katie Ray. Together, the two restaurateurs have grown their new sushi concept, and now they’re expanding to their first brick-and-mortar restaurant location.
Building permit paperwork has been submitted for a new Doanburi Sushi at 5840 Rainbow Blvd.
“It’s going to be a sit-down restaurant with a completely revamped menu,” Katie Ray told What Now in a phone conversation on Friday. “We are currently looking at an opening in mid-to-late summer.”
Launched on February 1, 2023, Doanburi has been on a challenging journey at Summerlin Takeout, Ray said: people don’t necessarily think of premium sushi as something to order for delivery. And yet the team’s work has paid off: this summer, Doanburi Sushi will graduate into a space with seating for 65 guests and a menu Ray says will be about triple the size.
“The menu is going to be contemporary modern Japanese, with entrees and a lot of cold and hot appetizers. It will have an American touch to it, with steaks, plus a touch of Korean.” And that’s along the brand’s popular sushi, which will still be readily available for pickup and delivery.
