Gable Opens Inside Hollywood Roosevelt Hotel in Los Angeles
Gable is a contemporary Californian restaurant located The Hollywood Roosevelt Hotel’s ground-floor dining space, just off the lobby. The restaurant opened on August 18. It is named after the legendary actor Clark Gable, who was one of the hotel’s famous residents.
According to a report by Eater LA, the space was previously home to Shirley Brasserie, a French-Californian restaurant. Shirley Brasserie was led by Chef Craig Hopson and focused on French classics, raw bar offerings, and wood-fired dishes.
Gable opens in one of Hollywood’s most recognizable historic hotels. The hotel has welcomed guests since 1927 and hosted the first Academy Awards in 1929. Gable bridges dining and Hollywood history with this opening.

Live-Fire Hearth Anchors the Dining Room
According to a Los Angeles Magazine report, the restaurant features an 82-seat dining room that is built around a live-fire hearth. It features a warm and welcoming design. The low pendant lights, wooden tables, and carefully selected artwork create a comfortable setting.
The Los Angeles Magazine report also shares that its menu is created by Culinary Director Chris Flint. He took inspiration from the many cultures that make up Los Angeles. Beverage Director Chad Austin has created a selection of classic drinks with a modern twist.
The menu features creative dishes and drinks, including martinis made with koji-washed vodka, tempura-fried maitake mushrooms, and bulgogi and kimchi pizza. Other menu items include pizza crust breadsticks with Époisses purée and red wine onion jam, and fennel cavatelli, according to Los Angeles Magazine.
