Founded in 2005 by CEO Tim McEnery, Cooper’s Hawk Winery and Restaurants has grown quickly to a footprint of more than 50 locations. It has several locations currently under development, and one of them, according to the restaurant’s website, is planned for Wellington, where it will open at 1387 S State Road 7.
The Cooper’s Hawk dinner menu starts with appetizers like Thai Lettuce Wraps, Chicken Potstickers, and Classic Tomato Bruschetta. Pasta & Risotto dishes include Country Rigatoni (Italian Sausage, Mushroom, Chicken, Roasted Grape Tomatoes, Herbs, Tomato Garlic Cream Sauce) and Braised Short Rib Risotto. A Burgers & Sandwiches menu features the Leonard Burger (A Tribute to Founder Tim McEnery’s Father—Double Patty, Signature Sauce, Caramelized Onion, American Cheese, Lettuce Tomato) and a Crispy Buttermilk Chicken Sandwich.
The menu also features a generous selection of wines by the bottle and by the glass, plus speciality cocktails like the Kentucky Mule, with Knob Creek, lime, ginger beer, mint, and candied ginger.
What Now reached out on Thursday to Tim McEnery to inquire about the Wellington location’s opening timeline. McEnery was not immediately available for comment.
