Located at 3444 Main Highway in Coconut Grove, Midorie is a neighborhood omakase spot offering “authentic Japanese cuisine for everyone.” And now, it’s preparing to expand to a new location before the end of the year, Alvaro Perez Miranda—the restaurateur behind APM Restaurant Group brands like Midorie, Hiyakawa, and Ogawa—told What Now on Monday.

“We are targeting the first week of November,” said Perez Miranda. “And we’re looking to open several more of them.”

Midorie’s menu features bowls like the Midorie Bowl (Salmon, Tuna, Blue Crab and Shiitake Mushroom), served with bases like Sushi Rice, Cha Soba Noodles, and Mixed Greens. There are plenty of a sushi a la carte options as well, but Perez Miranda says the most popular choice is Omakase—a $100-per-person tasting menu including 12 nigiri pieces and 1 maki. There are also constantly changing specials using rarer fish like the thornyhead rockfish.

What makes Midorie a concept conducive to expansion? What Now asked Perez Miranda.

“In my opinion, it’s about the quality versus quantity. We bring our fish from Japan, and often we use seasonal fish. We don’t focus on serving 100 people a day. We’re looking at more like 60 to 70 people. I think our customers can recognize that difference.”

The new Midorie will feature seating for about 20 guests, featuring a large piece of art by Paul Amundarain. (“Art is an important part of my restaurant and I commissioned this piece to be like a museum, just one big piece of art,” said Perez Miranda.) Opening at 500 Palm Street in West Palm Beach’s Flamingo Park neighborhood this restaurant is, as restaurants always are, all about location.

“I love the neighborhood,” said Perez Miranda. “And what we bring with our concept is—we are a great neighborhood restaurant with excellent quality. We always want to create a community, learn our customers’ names. We have regulars who come once a week.”

And if you need any more inducement to check out Midorie West Palm this November, the restaurateur says this location will also feature a great selection of sakes and Japanese draft beer.
