Hospitality Veteran Launching All-Day Café Concept in Lafayette

A restaurant called All Day will have service from early morning until evening

With more than two decades of experience in Louisiana and Texas, hospitality consultant Justin Audibert is preparing to launch an all-day cafe concept called All Day in Parc Lafayette, a mixed-use development in Lafayette. An opening date for the restaurant at 1905 Kaliste Saloom Rd. is set for late May.

Audibert recently told What Now New Orleans that All Day will offer a range of experiences throughout the day.

“You can go for breakfast; grab a latte and a pastry to-go,” he explained. “Or you can sit down and do remote work in the morning with your computer and have breakfast or coffee. You can also come for lunch, dinner, a date night, brunch, or happy hour. There are four or five different times that you can come and have a different experience each time.”

In addition to providing hospitality, an espresso bar, and a full bar that people can enjoy throughout the day, All Day will have a menu that brings some different flavors to the area.

“Why would I offer a po-boy or gumbo when, you know, your grandma or somebody down the road is gonna make it better?” Audibert said. “So, the menu is gonna be diverse: Asian dishes, Mexican dishes, Italian dishes, American fare, and I have some Cajun stuff. So, a little unique and diverse, but something for everybody.”

The beverage program will emphasize fresh-squeezed juices, scratch-made syrups, and liquors that are infused in-house. Audibert said he will be bringing his experience to bear and offering people in Lafayette more elevated, trendy cocktails — such as a margarita that’s superior to the competition.

“There’s a place down the road, and people think it has the best margaritas in the world,” he said. “They’re honestly terrible.”

“With me having been in Houston, Dallas, and Austin, and having worked a lot of Mexican concepts with real Mexican food, we’re going to bring a lot of aspects from those other places and elevate things so that people can experience drinks in ways that they haven’t before.”
