San Diego Sushi Spot Planning Orange County Debut

San Diego-based sushi restaurant The Sushi Stand will be coming to the new River Street Marketplace development this fall at 31801 Paseo Adelanto in San Juan Capistrano.

This will be the second location for The Sushi Stand brand and the first in Orange County. Its first location is in the Liberty Station Public Marketplace in San Diego. Owners Guillaume and Ludivine Ryon viewed the River Street Marketplace spot as a good opportunity to grow.

“Since the first location is doing well, we wanted to expand as much as possible,” Guillaume said.

The new location will have the same menu as the San Diego location, which serves specialty sushi rolls, classic rolls like spicy tuna and California rolls, and other Japanese dishes like onigiri, nigiri and poke.

The Sushi Stand will be one of the tenants joining the Rodeo River Street food court within the River Street Marketplace. It will be designed as a walk-up counter and seating will be communal for all the tenants in the food court. Guillaume describes the design as “a permanent farmer’s market,” similar to the Anaheim Packing District. As a result, The Sushi Stand will be a good option for customers who want to take their sushi bento boxes to go or to eat somewhere in the facility

“Our inspiration is that sushi is the perfect food for lunch and a quick dinner — the perfect food to-go as a healthy option,” Guillaume said. “The poke took over that approach: the healthy, Japanese-based lunch. So we wanted to bring the sushi back but in a fast-casual format that is delicious, not too pricey and healthy.”

Guillaume said The Sushi Stand’s emphasis on fresh, local ingredients sets it apart among other to-go sushi options.

“I think we’re the only fast-casual concept to actually offer fresh fish,” Guillaume said. “”We actually take the time to buy the local fish from fishermen and we cut it up ourselves. That’s why it tastes so good — it’s good stuff.”

As of now, the timeline for opening the new location is unclear as it depends on when the River Street Marketplace development will open. The marketplace released information that it is hoping to open in October.

The Sushi Stand will join other tenants like Capas Taco, Hudson’s Cookies, Kozan Teahouse, Bred Hot Chicken, Shootz and Kebab Craft in the Rodeo River Street food court.
