Wahoo’s Fish Taco is set to open a new location at John Wayne Airport in Santa Ana as part of the airport’s ongoing concession redevelopment. The restaurant is planned for 18601 Airport Way, Space B9.1, Santa Ana. The new outpost is being developed through HMSHost, which was awarded a 15-year contract to introduce more than a dozen new dining venues across Terminals A, B and C.
Founded in Costa Mesa in 1988, Wahoo’s Fish Taco was established by brothers Ed Lee, Mingo Lee and Wing Lam. The brand combines influences from Mexican, Brazilian and Chinese cuisine, with its menu centered on fish tacos and other casual dishes.
According to Wahoo’s, its menu includes fish tacos alongside burritos, bowls, salads and other Mexican-inspired offerings. The company’s current menu also features street tacos, including chicken or carne asada served with onion, cilantro and homemade avocado salsa, as well as its Chipotle Salad with kale, romaine, corn, cilantro, pepitas, avocado, cotija cheese, brown rice and tortilla strips.
Wahoo’s arrival is part of a larger effort to bring Orange County-born food businesses into John Wayne Airport. As of February 2026, Wahoo’s remained among the anticipated eateries in the new concession program.
