After recently opening a new location in Novus Innovation Corridor, Eureka! Restaurant Group has no plans on slowing down this year, opening several concepts throughout the Valley.
The restaurant group recently opened a 4,800-square-foot Eureka! location with a patio in the Novus Place retail development adjacent to the Tempe campus of Arizona State University. While the group is fresh off a recent opening, Paul Frederick, the founder of Eureka!, is already searching for more locations for restaurants in the Valley. He tells the Phoenix Business Journal that he hopes to open at least four restaurants in the greater Phoenix area by the end of 2025.
One of the places he has had his eyes on is a restaurant space in the $1 billion, 135-acre Cavasson development located on the northwest corner of Hayden Road and Loop 101 in North Scottsdale. Frederick hopes the site could possibly become a new location for both Eureka! and La Popular, a Mexican food concept owned by Eureka! Restaurant Group. Considering around three-quarters of Eureka’s locations are on or near college campuses, the restaurant group will likely search for sites near other college campuses, much like the recently opened Tempe location.
The restaurant group is also involved with a new pickleball development coming to south Tempe. Electric Pickle, a pickleball-themed entertainment concept currently under construction at 8688 S. Emerald Drive, was previously reported by What Now Phoenix, but the development is getting closer to being finished, with five other locations planned in Texas, the Southwest, and Scottsdale. There is no exact opening date for Electric Pickle, as the development was originally scheduled to be completed in late 2022.
