Chubby Cattle BBQ, a Los Angeles-based restaurant chain known for all-you-can-eat wagyu beef and high-technology dining, is preparing to open its first Sacramento-area location in Roseville, according to the company’s website and city building records. The restaurant is slated to move into 1905 Taylor Road, the former home of Tahoe Joe’s,  a steakhouse that shut down in 2022 after more than two decades in business, leaving the 7,100-square-foot space sitting empty ever since. April Li, CMO of Chubby Group, confirmed to What Now Sacramento that they are expecting to open in Spring 2027.

The incoming concept is part of Chubby Group, a fast-growing hospitality company co-founded in 2015 by David Zhao and Haibin Yang. The brand brings together Asian dining traditions and modern restaurant technology, featuring robot servers.

Chubby Cattle operates three distinct dining formats: BBQ, Shabu, and Hotpot. The Roseville location will operate specifically as Chubby Cattle BBQ. The space will undergo a full renovation and will feature robot servers as part of the dining experience, though this location will not include conveyor belts or projection dining rooms.

The chain has grown rapidly in recent years. According to the Sacramento Bee, in 2022, Chubby Group had raised $28 million to expand and modernize the hot pot and barbecue dining experience. It now counts more than 13 locations across the country, with restaurants in Los Angeles, Las Vegas, Chicago, New York, and Atlanta, among others.

As for jobs, hiring has not yet begun. Recruitment is expected to kick off approximately one month before the opening date.
