Fredericksburg restaurant owners Jesse and Sarah Barter are preparing to open Gulf Ranch, a new seafood-focused concept that will blend Gulf Coast cuisine with Hill Country influences.
Jesse and Sarah Barter, the couple behind Hill & Vine, are preparing to open Gulf Ranch at 101 W. San Antonio St. in Fredericksburg, with a target opening in summer 2027.
Jesse Barter spoke with WhatNow San Antonio about the upcoming restaurant, which is designed to bring fresh Gulf seafood to the Hill Country while incorporating flavours and ingredients inspired by different parts of Texas.
Gulf Ranch was inspired in part by Jesse’s upbringing on the Texas Gulf Coast and the couple’s experience living in Fredericksburg.
“I grew up on the Texas Gulf Coast, and we’ve always enjoyed seafood,” Barter said. “And living in the Hill Country, we don’t get as much seafood as often, and so we decided to incorporate some seafood into our new restaurant.”
The restaurant’s name reflects the two regions that inspired the concept. The “Gulf” represents the Texas Gulf Coast and its seafood, while “Ranch” pays tribute to the Hill Country’s ranching heritage and Texas beef.
“It talks about where we come from,” Barter said. “The Gulf Coast is synonymous to Texas, and such a wealth of great seafood comes from it. And then, obviously, the ranch component.”
The couple chose Fredericksburg because they already live in the community and operate Hill & Vine. Barter said they have lived in the city since 2013 and wanted to introduce another dining option to the community.
A major focus of Gulf Ranch will be fresh, sustainably sourced Gulf seafood, which Barter said is currently missing from the local dining scene.
“We definitely feel like there’s a missing component with fresh Gulf seafood,” he said. “We have the great ability to source fresh seafood daily to our restaurant.”
The menu is expected to feature a variety of Gulf seafood, including snapper, redfish, mahi mahi, jumbo crabs, Gulf shrimp and Texas oysters.
While Gulf Coast cuisine will serve as the foundation, Barter said the menu will incorporate influences from across Texas, including Cajun flavours from East Texas, Mexican influences and West Texas chile.
The restaurant is still finalising its menu, but planned dishes include oysters Rockefeller made with Texas oysters, a crab and shrimp Louis salad, Cajun redfish, seafood enchiladas and Texas beef.
Gulf Ranch will also offer options beyond seafood, including steaks, pasta, chicken dishes and vegetarian selections. A brunch menu will also be available during the day.
The restaurant’s design will combine a rustic contemporary exterior with a more lively interior.
Barter said the building will feature a limestone exterior and wood beams designed to complement Fredericksburg’s historic character.
“We want the building to feel like it’s from Fredericksburg,” he said.
Inside, guests can expect tall ceilings, a large bar and a more energetic atmosphere designed for celebrations and gatherings.
The restaurant will measure approximately 5,000 square feet and accommodate about 120 guests indoors. An outdoor courtyard and patio will provide additional seating for approximately 65 guests.
Barter said the goal is to create an atmosphere that feels welcoming and familiar.
“I want them to feel like they’re at home. Like, they’re walking into a home that their friends have invited them to,” he said.
The restaurant will also emphasise shareable dining, with large platters designed for families and groups to enjoy together.
The project is listed with the Texas Department of Licensing and Regulation as a 5,387-square-foot new-construction restaurant with an outdoor patio. State records list construction from September 2026 through July 2027.
For the Barters, Gulf Ranch is an opportunity to add another culinary option to a city that attracts both residents and visitors.
“I think that the most important thing I’m excited about is bringing another wonderful culinary option to the city of Fredericksburg,” Barter said. “I think that this restaurant will be loved by both locals and visitors alike.”
With its combination of Gulf seafood, Texas beef, regional influences and Hill Country-inspired design, Gulf Ranch is expected to offer Fredericksburg a new destination for seafood and Texas cuisine when it opens in summer 2027.
