As Coco Maya by Miss B’s makes its way through the county’s permit system, owner Pete Cich is working toward the restaurant’s late summer debut. The new Yucatan-inspired spin-off will take the place of PrepKitchen at 1660 India Street.
This news comes in the wake of the PrepKitchen brand’s sudden closure which shuttered four storefronts, as reported by SanDiegoVille last March.
“We’re still in the preliminary stages, still trying to get our ducks in a row,” Cich told What Now San Diego. ”But we’re aiming for a different spin on the Miss B’s concept. There will be a different menu, with food from the Yucatan side of the Carribean, so more Mexican-Carribean options on this one.”
The original Miss B’s Coconut Club was inspired by a fictional pin-up cartoon of “Miss B,” who was used to market real estate in Mission Beach in the early 1900s. According to the restaurant’s website, her image was printed in marketing brochures for beachfront cabanas along the Bay.
The Miss B’s brand is one of several belonging to Cich’s Grind and Prosper Hospitality company; other original concepts include Carlsbad’s Park 101 and North Park’s Louisiana Purchase. Coco Maya will set up shop on the corner of India and West Date Streets, making it neighbors with Salt & Straw ice cream shop and Parakeet Cafe.
