Rooster Bagel Cafe is planned for 515 Main St. in downtown Edmonds. A new liquor license application filed with the Washington State Liquor and Cannabis Board lists the business as Rooster and names Sarah Loertscher and Timothy Niles Peacock as applicants.
The license request includes restaurant lounge service for spirits, beer, and wine. It also lists growlers for takeout or delivery, off-premise wine sales, premixed cocktails and wine to go, and a direct-shipment receiver license limited to Washington.
A report from Davey Wilde describes Rooster as an all-day bagel concept. Beyond that description, few details have been released. The state filing does not include a menu, hours, or an opening date.
Peacock already operates Niles Peacock Kitchen and Bar at 178 Sunset Ave. S. near the Edmonds waterfront. The restaurant serves pizzas made with a 138-year-old sourdough starter. It also includes appetizers, salads, and desserts.
