According to recent public records, a new independent winery is coming to the Texas Hill Country.

Paradis Vineyard and Winery will soon begin building up its tasting room at 7585 Ranch Road 12 in San Marcos. Estimates state the build-out will cost around $280,000 and reach completion by May 2025.

Little public information exists about the exciting new project. What Now Austin was not able to reach owner Alan Paradis for further information.

Luckily, a public document from the Barton Springs Edwards Aquifer Regular Meeting & Public Hearing articulates the establishment’s plans and infrastructure.

On September 29, 2023 Paradis Vineyard and Winery, LLC filed a well-drilling application on September 29, 2023 with the Barton Springs/Edwards Aquifer Conservation District for one new nonexempt well, the document states.

“The well is proposed to be discretely completed in the Middle Trinity Aquifer. The well is planned to be used as a public water supply well for the winery’s tasting room and the domestic needs of a single home located on the property. The well will also be used to irrigate the vineyard’s grape vines.”

No opening date for the winery has been announced.
