Hillrose to be Home to The Whistle Stop Ice Cream Shop

The town of Hillrose has a new soft-serve store and eatery coming! Posts online show that a new concept titled The Whistle Stop Ice Cream Shop will open soon at 208 Marietta St., a great central location for the small city.

Facebook posts from the business last month announced, “Coming soon to Hillrose, Colorado: The Whistle Stop Ice Cream Shop. We’re a small, family-owned restaurant thrilled to be serving amazing hot dogs, loaded waffle fries, and the best soft serve in the area. Can’t wait to see you soon!”

Last week, The Whistle Stop Ice Cream Shop told a patron questioning about when it would open that they are waiting for the health department to sign off. Other recent posts show the team sampling out Jalapeño popper dog flights.

The shop is located right off Hwy 6, at the old filling station spot, and has high visibility from the road. Sheri Kline, the founder, is also a business owner who runs Spirit Canyon Gems.
