A bagel shop that started as a pandemic side project in 2020 for Adam Goldberg is expanding again in New York City. PopUp Bagels has set its sights on Tribeca, with plans to open in April at 315 Greenwich Street.
This will be PopUp Bagels’s fifth location in New York, joining existing locations in Downtown, Upper West Side, Upper East Side and Roslyn. The brand also has five locations in Connecticut and one in Massachusetts.
Goldberg told What Now New York that the team has just begun construction on the Tribeca location. They are planning to feature the same menu and design as the other New York locations.
“We try to keep it simple: hot bagels, schmears on the side,” Goldberg said. “Everything is straight from the oven — hot bagels rolling out every six to eight minutes.”
The Tribeca location is part of a broader expansion for the brand, which has begun to franchise to other markets. Goldberg expects to eventually have eight stores in the New York market, and 10-15 locations are heading to new East Coast markets in the coming year.
“We have a lot of loyal fans and bagel lovers in Tribeca, and we just wanted to bring our bagels closer to the neighborhood,” Goldberg said. “We love Tribeca. It’s a great community, both for family and for work, and we want to be part of it.”
