The Ravioli Theory to Take Over Former Bar 25 Space in Ayer

Chefs Terrell Wilson and Matthew Lucas are bringing globally inspired dishes and craft cocktails to Ayer.

A new dining concept is coming to Ayer at 25 Main St, just northwest of Boston.

Chefs Terrell Wilson and Matthew Lucas are transforming the speakeasy-style Bar 25 into The Ravioli Theory, a globally inspired restaurant and bar.

According to the Worcester Telegram & Gazette, the duo won the business lease in a July competition hosted by local restaurateur Reza Rahmani, who announced in May that he would give the space to someone with a fresh culinary concept.

Wilson and Lucas first met in 2021 at The Farmer’s Daughter restaurant in Sudbury, where they quickly became close friends while working as executive and sous chefs. After leaving in 2023, they decided to open their own place and eventually entered the Bar 25 contest.

The Ravioli Theory will “challenge conventional culinary norms” with globally influenced dishes, inspired by the idea that many cultures have their own unique version of ravioli.

MassLive reports that the menu will feature at least 18 cultural influences, including dishes like Greek lamb meatballs paired with Italian-style tzatziki tomato sauce. A rotating seasonal ravioli dish, named after the restaurant, will be a staple.

Craft cocktails with international flavors, such as a Jamaican-inspired margarita with hibiscus flowers, will complement the food.
