Ovest Via is an exciting new Italian dining concept set to transform the food scene in Parker, a recent press release announced. Slated to open in January, this restaurant marks the next chapter for Pam Briere, a prominent figure in the Colorado hospitality industry.
Known for her other ventures such as West Main Taproom and Grill, Villa Parker, and Elevated Taste Catering, Briere is now partnering with The Parker Hotel to open Ovest Via. The name pays homage to Briere’s roots, with “Ovest” meaning “West” and “Via” translating to “way” or “street”, she tells What Now Denver.
The eatery promises to bring authentic Italian flavors, fresh ingredients, and first-class service. Chef Victor, an experienced chef who worked at West Main Taproom, will be at the helm of culinary operations. It will be open Tuesday through Sunday, from 4 p.m. until close.
This new restaurant is part of a larger partnership with The Parker Hotel, where Briere and her team now oversee food and beverage operations. The deal includes not only the addition of the dining destination but also four sophisticated event spaces: The Upper Deck, The Summit, The Roosevelt Room, and the Hospitality Room.
