Details Unveiled for Hotel Longmont’s Rooftop Restaurant

The boutique hotel is set to open in 2025.

Hotel Longmont, a $24.5 million boutique hotel project spearheaded by The Thrash Group, will host a rooftop restaurant, reports reveal. Longmont Supply will be the name of the eatery atop the property, which is set to be developed on the northwest corner of Third Avenue and Kimbark Street.

Its menu will feature an array of appetizers, including West and East Coast oysters, beef carpaccio, sweetbreads, and lobster and brie bisque. Entrees include butter-poached lobster, a rack of venison, Colorado lamb, and a trio of premium steaks. Complementing the main dishes are sides such as truffled polenta, confit fingerling potatoes, and broccoli rabe with gremolata.

The hotel’s development was made possible through a partnership with the Longmont Downtown Development Authority and the Longmont City Council. The city transferred the land to The Thrash Group, offering incentives valued at $4.3 million—a combination of tax increment funding, lodging-tax reimbursements, and other subsidies.

This five-story, 85-room resort will also feature 4,000 square feet of commercial space at ground level and 2,600 square feet of flexible meeting and event space. A representative for Tandem Hospitality Group, who will manage the property, told What Now Denver it is slated to open in 2026.
