Bamboo Sushi, the world’s first certified sustainable sushi restaurant, announced the opening of its newest location in the Congress Park neighborhood at 1160 Madison St. The restaurant will officially open its doors late January, 2025, marking an exciting milestone in the company’s continued growth and expansion.

This new addition builds on Bamboo Sushi’s success in Denver, with its sister restaurant in the LoHi neighborhood.

“We are incredibly proud of what Bamboo Sushi stands for and the experiences we create for our guests,” said Connie Collins, CEO in a statement. “Expanding into Congress Park is an exciting step in our growth journey and an opportunity to share our commitment to sustainability, exceptional food, and hospitality with even more members of the Denver community.”

Bamboo Sushi’s curated menu caters to a variety of dietary preferences, with the majority of dishes being gluten-free, alongside a selection of vegetarian and non-sushi options. The restaurant will be open for lunch and dinner, with takeout and delivery services available.
